The Talisman of Earth is one of four Elemental Talismans that are necessary to open The Haunted Cathedral doors in the mission Return to the Cathedral. It was used by Keeper Andrus in sealing up the Cathedral to prevent The Eye from coming into the hands of The Trickster.[1][2]
In Thief: The Dark Project it was held in the Hammer Temple located in Downtowne along with the Talisman of Air, which Garrett retrieves in the mission "Undercover". In Thief Gold the Talisman of Earth is kept in the Hand Brotherhood compound somewhere outside of The City. In the mission "The Mage Towers", Garrett must navigate the four elemental towers, beginning with the water tower, before stealing the talisman from the central tower.
Either way, Garrett acquires the Talisman of Earth, along with the other 3 Talismans and use them to open up the Elemental Wards, allowing him access to the Cathedral, and the Eye inside it.

- In Thief Gold, the Earth Talisman is the only one kept outside of the city, and one of two (along with the Air Talisman) somehow given to a certain sect to guard, yet neither the Hand Brotherhood nor the Hammerites appear to know of the Keepers until much later.
